BENGALI MOCHAR GHONTO
INGREDIENTS-
-banana flower (mocha).
- 2 medium sized potato.
- 2 green chillies.
- 1 tablespoon ginger garlic paste.
- 4 green cardamom and cinnamon sticks.
- 1 cup coconut powder.
- 1 dry red chilly.
- 1 bay leaf.
- 1 spoon sugar.
- 1/2 tablespoon red chilly powder.
- 1/2 tablespoon turmeric powder.
- 1/2 tablespoon cumin powder.
- 1/2 tablespoon coriander powder.
- 1/2 tablespoon umin seeds.
- salt according to taste.
- 2 tablespoon ghee.
- 4 tablespoon mustard oil.
- 1 tablespoon garam masala powder.
METHOD-
- Take out the white small flowers inside the big banana flower.
- Now gently take out the hard petal and a stick inside the small banana flower part.
- Chop all the white flowers into small pieces.
- Put all the chopped flowers and the big sized chopped potatoes into a pressure cooker.
- Add salt and water and boil it till for 1 whistle.
- Let it cool.
- Take a pan and add mustard oil to it.
- Now add a bay leaf, a dry red chilly, cinnamon stick, cardamom and some cumin seeds.
- Fry it for few seconds.
- Next add 2 green chillies and ginger garlic paste.
- Fry it till the raw smell goes.
- Add red chilly powder, coriander powder, cumin powder, salt and turmeric powder.
- Mix and fry them well.
- Now add the boiled potatoes and banana flowers into it.
- Fry it till it dries completely.
- Add a little water to it.
- Mix it properly and cover the lid.
- Uncover it after 5 mins.
- Now add sugar and coconut powder to it.
- Cook for 5 more minutes.
- At last add 2 tablespoon of ghee and garam masala to it.
- Serve hot and enjoy the taste.
SUGGESTIONS-
- Grease your hands with mustard oil and then take out the flowers or you may have some black spots on your hands.
- Boil the potatoes and banana flowers together, it will take less time to cook.
- Add the cardamom to the oil only after peeling the outer skin or it may hit to your face.
- Add the masalas into the oil in a low flame or the masalas may get burnt.
- Use ripe banana flower for cooking this recipe for better taste.
- Do not forget to add coconut powder as it gives a very good taste to your recipe.
- Garnish it with green chillies.
